I never worked for insurance companies. I prefer homeowners, but one of my friends is going through his insurance company for roof damage. Does anyone have an Exactimate pricing sheet for Erie,PA. or pennsylvania. lol. So at least I know what I am up against. I am sure it is much lower than I am going to bid, but who knows. Also, Exactremodel 3 came out. It is supposed to be for remodeling or roof replacements. Not strictly like insurance work. Does anyone have that program? Are the prices higher on the remodeling one.

You can add in for overhead and profit in any Xactnet program.
In Xactimate 27.3 you go under claim info than under peramiters.
I have seen some posts around the internet that mention there is not an area in the prices that include for overhead and profit on the job. Is this true?
What you need to do is break down your estimate as much as possible and have prices for each line item. Most estimates I send to insurance companies in Xactimate have 13-14 line items.
Even if you don't have Xactimate you can outline the scope by line item and any adjuster can punch the "missing" line items in and get to a fair roof price.
In my area Xactimate pays much higher than out of pocket roof replacements. Last year did a lot of non insurance work and found myself bidding for a hundred bucks or so less than Xactimate. Of course in my area Xactimate on a hip roof 7/12 with lams pays over $400 a square.
BTW, if I bid every roof off Xactimate that was not insurance it would be a lot of free estimate and very few landed jobs.

You don't really need to know what the insurer will pay. Just submit your estimate to your friend as high as you want/need. The insurer will either accept your numbers or try to drive your price down to their numbers.
Like any negotiation...it's a process. Some hate this process, others thrive in this environment.
I typically agree to do most roofs for the RCV and any applicable supplements. In most cases we can hit our desired numbers. Occassionally, we fall slightly short. Other times its much better than what we "need". I look at it as "taking the good with the bad".
You can get the same, or similar numbers from the National Estimator which is substantially cheaper than Xactimate.
My question to you is this: has your friend already awarded you the job or are you in a situation where hes trying to drive your price down and try to pocket some money? Each scenario creates a different course of action.
