A lot of different options, I attached pics, and would like advice on different flat roofing systems for this project. Torch down? Rubber? etc.

When it comes to dead level roofing, I was weaned on one product only, and that is coal tar pitch. EPDM is verboten by the manufacturers, and asphaltic membranes form soluble asphaltenes, that eventually breakdown. Have witnessed life spans under water for pitch, from 40 to 70 years.
It looks like a 3 ply built up system.It all depends on the tools and the expertise you have.
